FRESH

Cheese in its youngest, purest form. Think fluffy ricotta, soft mozzarella, crumbly feta.

SEMI-SOFT

Cheese with high moisture content. Tend to be mild-tasting. Think mozzarella, Manchego and Havarti.

SOFT

Who can resist the creamy and often spreadable texture of soft cheese? Think brie and feta.

SEMI-HARD

Very similar to hard cheeses, except they aren't as hard (duh!). Think gouda and provolone.

HARD

Lower moisture content than soft cheeses and are packed into moulds under lots of pressure. Typically aged longer than soft cheese. Think parmigiano-reggiano, asiago and pecorino

BLUE

Blue cheeses have had cultures of the mold Penicillium added so that the final product is spotted or veined throughout with blue. Think St. Agur and Blue Benedictine.

FLAVOUR ADDED

Flavoured cheese is made by adding ingredients to subtly change the flavour. Flavour added cheese can usually be divided into four different types: Natural Smoked, Traditional, Rind-Flavoured and Re-formed Cheeses. Think Mango Ginger Stilton and Drunken Goat.
