Raclette Nachos

A fun way to use raclette beyond the traditional potato! This twist on nachos swaps in silky, flavour-packed raclette for a richer, more indulgent melt. It’s the kind of dish that feels both comforting and special. Once you try it, regular nachos may never feel the same again.
Ingredients:
1 tbsp olive oil
1 medium onion, thinly sliced
1 cup mushrooms, sliced
½ lb (225 g) ground beef
1–1½ tsp Montreal steak spice
8–10 oz (225–280 g) raclette cheese, sliced
1 large bag tortilla chips
How to Cook:
In a skillet over medium heat, warm olive oil and cook onion and mushrooms until soft and lightly golden.
Add ground beef and seasoning; cook until browned and cooked through.
Arrange tortilla chips on a baking sheet and layer with beef mixture and sliced raclette.
Place under the broiler until the cheese is melted, bubbling, and lightly browned.
Serve immediately, finished with herbs or a dollop of sour cream if desired.
Cheese Tip:
Raclette melts beautifully and works anywhere you’d normally use mozzarella – but with more flavour.
