This is a simple appetizer that feels a little special. The bold, creamy flavour of Shropshire Blue cheese pairs perfectly with the natural sweetness of ripe pear and golden honey. Served on warm, toasted bread and finished with crunchy walnuts and fresh thyme, every bite has a balance of sweet, savoury, and crisp textures. It’s an easy dish that comes together quickly but tastes like something you’d order at a restaurant.
Ingredients:
1 baguette or sourdough loaf, sliced
120–150 g Shropshire Blue cheese
1 ripe pear, thinly sliced
2 tbsp honey
¼ cup toasted walnuts
Fresh thyme leaves (optional)
Olive oil
Fresh cracked black pepper
Serves 4 as a starter.

How to Cook:
Toast the bread.
Brush slices lightly with olive oil and toast in a 375°F (190°C) oven for about 8–10 minutes until golden.
Add the cheese.
While the bread is still warm, crumble Shropshire Blue generously over each slice.
Layer the pear.
Add thin pear slices on top of the cheese.
Finish.
Drizzle with honey, sprinkle with toasted walnuts, thyme, and a little cracked black pepper.
Serve immediately.
The warmth of the toast softens the cheese slightly—beautiful texture and flavour.
Note: This blue is incredible on warm toast with pear, honey, and walnuts. It’s a five-minute appetizer that feels restaurant-level.
